Just as the caterpillar, who knows nothing of the butterfly it is to become, spins its cocoon and undergoes complete transformation, each of us contain seeds of potential - the flowers and fruits of which we know nothing. Yet the seeds will grow, buds will form, and we will transform and bloom in many ways throughout our lives, continuously becoming more and more ourselves. These transformations are not orchestrated by our willpower or thoughts, but through allowing and trusting the process of growth.

Bone broth is a longstanding traditional recipe, dating back hundreds if not thousands of years. Not only is bone broth rich in protein, minerals, collagen, and gelatin, but it makes very good use of animal parts which are too often considered ‘scraps’ and thrown away.

I also use vegetable scraps to make my broth, making it nutritious, delicious and economical! If you are a vegetarian, you can still make home-made vegetable broth jam packed with minerals and immune boosting herbs!

Chicory Root Coffee

I've spent the last few days in New Orleans, Louisiana - a city famous for its culture, cuisine, and chicory root coffee. In many coffee shops around the city you can order 'New Orleans Style' coffee brewed with roasted chicory root.
Chicory root has been used for thousands of years, and was popularly used as a coffee additive in 19th century France when coffee was scarce. The French noticed that chicory added new depth to the flavor of coffee and had additional health benefits. This tradition has waned in France as coffee became widely available again, but carried over to become part of New Orleans' unique legacy. However, you do not need to be in New Orleans to enjoy this delicious and healthful drink, nor do you have to ingest coffee at all. You can make roasted chicory root "coffee" right at home! From the earth to your mug.

Tinctures are widely used because they are concentrated, portable, convenient to take, and have a very long shelf life. They are also easy to make at home! However, for those who are more accustomed to taking supplements in pill or capsule form, there can be a bit of a learning curve. Method: Drying Herbs in your Car

This spring I harvested a lot of Nettles. Some I made pesto out of, some vinegar and tincture, but most I dried to make nourishing infusions throughout the year. For more information on the many properties and uses of this plants, see my post Spectacular Stinging Nettles. A popular method of drying is to hang the nettles by their stalks in pairs. This year, rather than hanging them to dry, I decided to use my car as a dehydrator and it worked better than I imagined! Like an electric dehydrator, there is good ventilation and protection from direct sunlight (for the most part). And no need to use electricity! The benefits of this method include faster drying time and not cluttering your living space. Downsides include: not being able to use the back of car for a few days and remembering to close the windows at night and if it rains.

Super Chai Tea

Yesterday I packed away all of my winter clothes and took the insulating plastic off of my windows, heralding in the warm spring weather. Now with today’s hail and snow, I really wish my sweaters weren’t so under wraps! Lucky for me there are many delicious herbs to keep me warm and keep my immune system strong during this time of transition. Chai tea is one of my favorite warming herbal preparations. So, on this chilly spring day I am glad to snuggle up with some warm chai tea and a good book and enjoy the flowers through the window. I call this recipe "Super" Chai because it focuses on adaptogens - herbal superheroes.

Spring is surely springing, as are the many fabulous spring greens! Urtica Dioca- Stinging Nettle - is an amazing herbal ally that begins growing in early spring. Nettle is a deeply nourishing herb, extremely high in vitamins, minerals, and protein. It can also be used as a dye, a fiber, and to relieve arthritic pain. This common weed, often cursed for its sting, has a lot to offer.
